  • Welsh Rarebit: Brioche finger, three cheese, beer and wholegrain mustard puree, blowtorched nasturtium

  • Pork Pie: Pastry case, smoked pork hock and pork neck filling, picalilli gel
  • Teacake + Yorkshire Tea Butter: Nel. tea-infused butter
  • Jellied Eel: Eel custard, fold in flaked eel meat, smoked tomato dashi jelly, tarragon and spinach herb puree, chilli and garlic breadcrumbs
  • Leek + Potato Soup: Sous-vide leek rounds, white soy and butter, potato ribbons, steam and smoke, crispy parsley, burnt leek powder, onion fondant petals
